Vegan Banana Bread Recipe

Last week when faced with 3 overly ripe bananas, I decided it would be really fun to bake banana bread with my toddler. I can hear everyone laughing as I write this…I probably won’t be doing that again for a while, and unless you have lots of extra ingredients to make up for all that will end up on the floor, and all day to clean after it goes in the oven, I suggest you bake this yourself. I just decided to create a recipe from what I had in my pantry, and it turned out to be a really tasty, low sugar, high fiber version of the classic.

Holly’s Hippie Banana Bread*

* ¼ cup organic brown sugar
* ½ tsp organic vanilla
* 4 tbsp ground organic flax seeds, mixed with 3/4 cup water
* 1 ½ cup organic bananas, mashed
* 2 cups organic oat flour
* 2 tsp aluminum free baking powder
* ½ tsp fine sea salt
* ½ tsp baking soda
*organic walnuts and cinnamon for sprinkling

Heat oven to 350° Fahrenheit.
Mix sugar, vanilla, and flax seed/water mixture.
Add bananas.
Combine dry ingredients in a separate bowl.
Stir dry ingredients into banana mixture.
Pour in bread loaf pan (9×5×3 inches) (I greased mine with coconut oil)
Sprinkle chopped walnuts and cinnamon on top, just before putting in the oven.

Bake 45 minutes, or until toothpick inserted in center comes out clean.

Yum!

*This is a vegan recipe, but you’ll never miss the milk, eggs or butter!

My son enjoyed the process so much, and when his daddy came home he ran to him and said, “NANA-BED!” That moment was worth every bit of the clean-up, and I’m sure I’ll be doing it again very soon. Oh- and next time I plan to add chocolate chips.

Asparagus Frittata

Asparagus Frittata Recipe

Ingredients

2 teaspoons olive oil
1 small onion, thinly sliced
1/2 teaspoon salt
1 pound asparagus, tough ends snapped off, spears cut diagonally into 1-inch lengths
4 large eggs, lightly beaten
1 cup shredded Gruyere or Swiss cheese

Method

1 Heat olive oil into a 10-inch oven-proof frying pan over medium high heat. Add onions and salt and cook, stirring occasionally, until onions are softened, about 3 minutes. Add asparagus, reduce heat to medium-low, and cook, covered, until the asparagus are barely tender, 6 to 8 minutes. Pour in eggs and cook until almost set, but still runny on top, about 2 minutes. While cooking, pre-heat oven broiler.

2 Sprinkle cheese over eggs and put in oven to broil until cheese is melted and browned, about 3 to 4 minutes. Remove from oven with oven mitts and slide frittata onto a serving plate. Cut into wedges.

Serves 4.

Kale Chips

Kale is one of the world’s healthiest foods, but it’s hard to get some members of the family to try it- here’s a way to make it that is sure to please everyone!

Kale Chips
Wash and thoroughly dry one bunch of dinosaur kale
De-rib the kale and tear into good size pieces
Put pieces in a bowl, season with sea salt and drizzle with coconut oil.
Mix well and bake at 350 for about 20 minutes. turning once, halfway through.
Keep your eye on them and remove from oven when crunchy and a little brown.

They crisp up like chips and are so tasty!

Sweet Potato Black Bean Burgers

I got this recipe from a friend of mine, Emily Rosen who is the wellness and nutrition director for a weight loss camp for children and the executive chef at a retreat center in Western Massachusetts.  It is a crowd favorite, even amongst meat eaters and toddlers!

Black Bean Sweet Potato Burgers:
•       2 tablespoons olive oil, divided
•       1 small onion, small dice
•       4 cloves garlic, pressed
•       2 tablespoons diced spicy pepper (like jalapenos)
•       1 tablespoon ground cumin
•       2 (14.5 ounce) cans black beans, drained and rinsed
•       salt and black pepper to taste
•       2 cups grated raw sweet potato
•       1 egg, lightly beaten
•       1/2 cup plain dried bread crumbs
1.      Heat 1 tablespoon olive oil in a small skillet over medium heat. Cook onions until softened, about 1 minute. Stir in garlic, 2 diced jalapenos, and cumin; cook until fragrant, about 30 seconds.
2.      Transfer contents of skillet to a large bowl. Stir in black beans, and mash with a fork. Season with salt and pepper to taste. Mix in sweet potatoes, egg, and bread crumbs. Use medium ice cream scoop to shape them into even portions, than flatten into patties.
Place bean patties on sprayed parchment paper on baking sheet and bake at 350 for 20 minutes.
