The almighty coconut contains lauric acid which your body uses to make monolaurin- an essential fatty acid. It is antiviral, antimicrobial and antibacterial so it helps your immune system fight off any bugs you are exposed to, and it will help you heal when you are sick. Here are a few ways to add it to your family’s diet:
Drink coconut water (especially if one has the flu- it is an amazing rehydrant!) Aim for 8 oz a day
Use coconut oil for cooking and baking (it’s a very healthy fat that actually promotes weight loss)
Add coconut milk to smoothies
and my personal fave- Eat coconut macaroons! Here is an easy recipe for a healthier version:
- 1.5 cups organic no sugar added coconut flakes
- 8 pitted dates
- 1 banana
Place all ingredients in food processor, and process until smooth.
Add more coconut if the mixture is too gooey- it should just be moist.
Bake at 325 degrees 10-15 minutes until cookies are golden brown- enjoy!
